Breakfast Sausage Freezer Burritos

Hey friends! I’ve been trying to do more meal-prepping in our home. We live busy lives, work full-time and are parents to a little boy. One thing my husband and I can agree on are these Breakfast Sausage Freezer Burritos. When making these I recommend using burrito size tortillas but taco ones could work if you want to make smaller portions.

Let’s begin…

Preheat your oven to 400F and grease a baking sheet.

Cook your frozen tater tots according to package directions. Sometimes, I’ll add a little seasoned salt to them but it’s not listed in the recipe. Personal preference, you can totally omit it if you want.

Make the sausage filling

Heat avocado oil in a large skillet over medium high heat. Add sausage and cook until browned. Crumble the sausage as it cooks, drain the excess fat, save 1 tablespoon of oil in the skillet.

Eggs

Add eggs to the skillet and cook, whisking until they just begin to set. Gently whisk in half and half, season with salt and pepper to taste. Continue cooking until thickened and no visible liquid egg remains, about 3-5 minutes – set aside.

Fill the tortillas

Spread beans down the centers of tortillas. Top with tater tots, sausage, eggs, cheeses, tomatoes and cilantro. Fold on opposite sides of each tortilla, then roll up burrito-style.

Place the most delicious breakfast sausage freezer burritos in the oven and bake for 15 minutes. Or if you are impatient like I am – go ahead and eat one now. Don’t forget to add sour cream, salsa and guacamole.

  1. Yum! So easy but they sound delicious! I usually don’t put refried beans in my breafast burritos, but that’s a great way to mix it up!
